Vegan Pumpkin Chili

It’s a rule of fall: everything tastes better with pumpkin. I found this recipe on Janice Amee’s Gluten Free blog when I was searching for something pumpkin-y to make for dinner. This recipe jumped out at me because it looked easy to make and most importantly, delicious…thankfully, it proved to be both! I made a few tweaks to the Janice Amee’s recipe and posted it below! Note: I added a little bit more spice than what I listed in the ingredients, but my chili ended up having quite a kick to it (which my family enjoyed!). So if your taste buds can handle it, spice it up!

Vegan Pumpkin Chili (serves 4)

INGREDIENTS:

1 Onion, chopped

1 Bell Pepper, chopped

2 Tomatoes, chopped

1 can black beans

1 can kidney beans

1 can 100% Pure Pumpkin

Minced Garlic, 2 tablespoons

Cayenne Pepper, ½ teaspoon

Chili Powder, ½ teaspoon

Ground Red Pepper, ½ teaspoon

Olive Oil

Salt to taste

DIRECTIONS:

  1. Sauté onion, pepper, and garlic (in large sauce pan) in olive oil over medium heat
  2. Add tomatoes, beans (don’t have to drain or rinse, just pour it all in!), and spices and simmer for a few minutes
  3. Add pumpkin, stir, and simmer over low heat for at least 30 minutes (longer it simmers, the more flavorful it will be!). If you want a spicier chili, feel free to add more spices
  4. Serve and enjoy!

Fall Break Style

It’s Fall Break, which means midterms are over (finally!!), and I have some much needed time to relax and enjoy one of my favorite times of year with my family. On our first night together, my mom and I whipped up a fall favorite for dinner…butternut squash soup (look out for the recipe coming to The Pace soon!!). My mom is also an avid reader of The Pace (so supportive 🙂 ), so while we were grocery shopping, she reminded me to pick up a pumpkin to cross off Number 3 from my Fall To-Do List: carving a pumpkin!

One of my favorite things about fall is layering. This sleeveless top (similar here) transitions perfectly from summer to fall with the help of this over-sized cardigan (similar). The secret behind this look? It’s borrowed from the boys! My boyfriend, Eric, was about to toss this cardigan from Zara into the donation box when I convinced him to donate it to my closet instead ;). Now, I wear this cardigan with everything—dresses, sleeveless tops, tee shirts…you name it! It’s the perfect layering piece.

Fall To-Do List

Fall is one of my favorite seasons. I may be biased (I’m an October baby), but I think there is such a special feeling in the air during autumn. I start craving everything pumpkin flavored, boots are all I want to wear, and the crunching leaves and crisp air make me feel so warm and fuzzy 🙂

There are so many things to do during the fall season (and I am not just talking about the long list of assignments and exams on my course syllabi…) so I decided to make a short list to make sure I live this season to the fullest!

I consider myself a queen of to-do lists (I have an entire notebook dedicated to daily and weekly lists), but with a fun list like this one, I have found that it is really important to keep it short and sweet. Let the lists in the other areas of your life be long and tedious, but keep this one fun and very do-able!

  1. Enjoy a Pumpkin Spice Latte

Some of you may be wondering why this is even on my list…isn’t it just a given that fall=pumpkin spice lattes? Maybe for some, but I just can’t get over the 300+ calorie stamp on each of these drinks and the fact that Starbucks prices are not exactly “college student friendly.” But calories and cash aside…I love pumpkin spice lattes. So this fall, I am going to treat myself and enjoy (at least) one of these bad boys.

  1. Go for a walk around Philly on a crisp fall morning or afternoon

My boyfriend recently moved into his apartment in Philadelphia, which means I will now be spending a lot of time in the city. Fall is one of the best seasons to go for a stroll; it’s not too hot, not too cold, and there is something in the air that just makes me smile. I can’t wait to explore Philly through crunching leaves and maybe even with a Pumpkin Spice Latte in hand 😉

  1. Carve pumpkins!

I haven’t done this for years. Carving pumpkins used to be a tradition in my family that I looked forward to all year. It was messy, it was difficult (I always ended up calling upon my parents to help me finish cutting out my design), but it was always a blast.

  1. Visit Linvilla Orchards

Linvilla Orchards is easily one of my favorite places in the area. Only a short drive from my university, it is a must-visit for everyone in the Philadelphia area. Linvilla has something for everyone, but my favorite things to do there are apple picking, finding my way through the corn maze, and enjoying pumpkin-flavored ice cream and apple cider donuts.
